Recipe:
Make the potatoes into wedges
Boil them with a frightening amount of salt
Rough them up with some oil
Air fry them at 375F or so until acrylamide has formed as a byproduct of the amino acid asparagine reacting with glucose and fructose

Awesome sauce:
onion, green, smithereened
2 part mayo
2 parts yogurt or sour cream
1 part tahini
½ to 1 part vinegar
0 parts ketchup
1 clove garlic grated (depending on how big all the other parts are and depending on how much you like garlic, which should be a lot because of how good it tastes)
some pepper pepper pepper (oh did I forget the pepper pepper pepper?)
